Jadran Tuna was established in 1997, and its headquarters are located in the Biograd na Moru industrial zone. The logistics centre with cold storage has a capacity of 2200 tons.
The farm is located 7Nm from the logistics centre and has a farming capacity of 1760 tons and registered with ICCAT under No. ATEU1HRV00008.
Jadran Tuna is owned by fishing families that represent the tradition and history of Croatian fishing. The company owns a large fishing fleet, transport vessels, tug boats and vessels for logistical purposes on the farm.
From Jadran tuna’s beginning until today we have all invested lots of effort to get the company to today’s level. It takes partner’s trust and respect to succeed on traditional Japanese market, and our status on the market is the best witness of commitment of whole Jadran tuna and all our workers.

Due to the exceptionally clear waters, strong currents and high salinity, companies conduct fishing operations in the zone of the Jabuka fishing area – Middle Adriatic sea.
Large numbers of small baitfish can be found in the Jabuka area which attract schools of tuna during the fishing season.
Caught fish generally weighs between 8 and 20 kg. Finally, registered live fish are transported by tug boats in towing cages to our farm which are some 80Nm away.

For centuries, bluefin tuna has been a prominent food in the Mediterranean diet thanks to its many beneficial properties for our health. The presence of omega 3 fatty acids in its composition is noteworthy. Rich in minerals such as selenium, phosphorus and magnesium, bluefin tuna provides a diverse range of vitamins: (A, B, B3, B9, B12 and D) and is an excellent source of proteins of high biological value. We invest a lot of effort and attention in the quality of farming of our tuna. Controlled feeding with domestic small pelagic fish for minimum18 to 30 months, monitoring and analysis of the sea gives us the ultimate top product that is 100 % natural without any artificial supplements and antibiotics. We can proudly say that we at Jadran tuna have brought our product to the peak of quality so that our customers can enjoy it.
AKAMI is next to the spine, which gives this part of the fish an intense red colour, due to its lower levels of fat than other parts of the fish. Bluefin tuna akami is the perfect cut of fish served raw, as sushi, sashimi, ceviche, or tartar, but is also fabulous barbecued and grilled if you prefer cooked fish. This part of tuna also has the most umami tuna flavour of all other, fattier cuts. Super-frozen at -60 degrees and stored in our state-of-the-art freezers, a technique perfected by sushi/sashimi master’s to lock in the memorable taste, texture, and colour of bluefin tuna.
CHU TORO - this is a perfect blend of Otoro and Akami because it straddles both types of tuna,
providing a meaty and fatty texture for a real celebration in your mouth. Is usually found near the skin on the back and belly. Otoro combines the lighter but deep flavour of an akami with the sweet tenderness. Dive into the perfect combination of Jadran tuna flavours.
O-TORO is the fattiest and most flavourful part of the bluefin tuna, located in the belly area. It is a true delicacy that melts in your mouth, leaving you with a rich and unforgettable taste. Otoro is highly sought after by sushi chefs and seafood connoisseurs for its succulent and buttery texture. Despite its high-fat content, otoro has a surprisingly sweet taste and a soft, almost creamy texture. When you eat otoro, it feels like it's melting in your mouth, creating a unique and unforgettable culinary experience.
Akami nigiri is a traditional Japanese type of nigiri sushi. It consists of hand-pressed sushi rice that's topped with slices of akami (red meat) tuna. There are also otoro (fatty tuna) nigiri sushi and chutoro (medium-fatty tuna) nigiri sushi varieties, and all of them are classified under maguro (tuna) nigiri sushi. The slices are on the thicker side and the focus is on tuna's velvety and firm texture. Due to the fact that tuna is the focus, the quality of the meat must be flawless for such dishes. The catch of the day freezes within short time at -60°C with super freezing technology.
